Grilled Salmon and Broccoli Salad

Ingredients:
1 salmon fillet
2 cups fresh broccoli florets
2 cups mixed greens (spinach, arugula, kale)
1/4 cup chopped onions
Olive oil
Salt and pepper to taste
Lemon juice (optional)
Marinade for Salmon:
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
Instructions:
Step 1: Marinate the Salmon
In a small bowl, mix together the olive oil, lemon juice, garlic powder, paprika, salt, and pepper.
Place the salmon fillet in the marinade, ensuring it is well-coated. Let it marinate for at least 30 minutes to an hour.
Step 2: Grill the Salmon
Preheat your grill to medium-high heat.
Place the marinated salmon on the grill and cook for about 4-5 minutes on each side or until the salmon is cooked through and has nice grill marks.
Remove the salmon from the grill and let it rest for a few minutes.
Step 3: Prepare the Broccoli
While the salmon is grilling, steam the broccoli florets until they are tender but still crisp, about 4-5 minutes. Alternatively, you can roast the broccoli with a bit of olive oil, salt, and pepper in a 400°F (200°C) oven for about 15-20 minutes.
Step 4: Assemble the Salad
In a large bowl, combine the mixed greens, steamed or roasted broccoli, and chopped onions.
Drizzle with a bit of olive oil and lemon juice if desired. Season with salt and pepper to taste.
Place the grilled salmon fillet on top of the salad.
Step 5: Serve and Enjoy
Serve the salad immediately while the salmon is still warm.
